It is a really strong plant that does not mess around.
Kale is sort of the "it" vegetable right now. People are always talking about juicing it or just eating it raw. There are always lovely kale salad recipes online. It is SUPER healthy. Plus, my farmers market always has the best varieties of organic kale for super cheap!
When I visited Mecca a few months ago I had a kale and avocado salad that was to die for.
Kale is also very common in Portuguese cooking. Since I was born in a Portuguese community with a Portuguese grandfather, one would think I had tons of kale growing up. Wrong.
I feel like I have rediscovered a vegetable. Don't you love that? My new favorite way of eating kale is about as simple as it comes. Ready for it?

Chubby Vegan Kale
5-6 Large Leaves of Kale
2 T. Olive Oil
3 T. Sesame Tahini
1-2 T. Sesame Seeds (optional)
Begin by thoroughly washing kale and tearing the leaves from the hard stems (veins). Once the leaves are washed, tear them apart or chop them into smaller sections. Pat dry.
Add olive oil to a heavy bottom skillet and warm on medium - high heat. Add shredded kale leaves and saute for about 3-5 minutes until the leaves begin to wilt.
Turn the heat down to a low simmer and add tahini. Tahini will clump so do your best to mix it with all of your pieces of kale. Turn off the heat and add your sesame seeds.
Chubby Vegan Notes
- When paired with quinoa or pita bread, this is one of my favorite super easy dinners.
- If I add this to a large wrap it makes a wonderful sandwich, especially when I add some other raw vegetables, hummus, or baked tofu.
- Of course, feel free to cut down on the olive oil, use an oil spray, or even boil your kale. Better yet, eat it raw!
